Ingredients

  • 1 lb ground turkey
  • 2 eggs
  • 1 cup quick oats
  • 1 -2 tablespoon dried onion flakes
  • 1/2 - 1 teaspoon dried oregano
  • 1/2 teaspoon basil
  • 1/2 teaspoon garlic powder
  • 1 quart no-salt-added chicken broth
  • water
  • 1 (6 ounce) can no-added-salt tomato paste
  • 1 cup water
  • 1 tablespoon evaporated cane juice
  • 1 -2 tablespoon grated parmesan cheese
  • 1 teaspoon oregano
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 pinch dried parsley
  • 1 teaspoon dried basil

Method

  • Process oatmeal until coarse powder (like dried breadcrumbs).
  • Remove from processor.
  • Place turkey, eggs, onion, spices and ground oatmeal into processor, and with metal blade, process until blended.
  • Mixture should be firm enough to roll into balls.
  • In a large saucepan, bring broth to simmer. Add water as needed to accommodate all meatballs.
  • Roll meat into small balls (1 inch in diameter) and drop into broth, and cook for 10 minutes or until done.
  • For sauce, mix tomato paste and water with a whisk until blended.
  • Add all other ingredients and mix.
  • Heat through, and serve with meatballs and pasta.
