Ingredients
- 4 to 6 medium size potatoes
- 2 medium onions
- nonfat Cheddar cheese slices
- 2 cans 99% fat-free cream of mushroom soup
- butter flavored cooking spray
- salt and pepper
- 1 c. skim milk
Method
- Wash and slice potatoes thinly; do not peel.
- Slice onions thinly.
- Spray 2-quart casserole with cooking spray.
- Layer potatoes (sprayed with cooking spray), onions, cheese and undiluted soup.
- Repeat layers, adding salt and pepper to taste. After layers are in dish, mix remaining soup with milk and pour over mixture. Top with more cheese.
- Bake 1 hour at 350°.
