Ingredients

  • 4 to 6 medium size potatoes
  • 2 medium onions
  • nonfat Cheddar cheese slices
  • 2 cans 99% fat-free cream of mushroom soup
  • butter flavored cooking spray
  • salt and pepper
  • 1 c. skim milk

Method

  • Wash and slice potatoes thinly; do not peel.
  • Slice onions thinly.
  • Spray 2-quart casserole with cooking spray.
  • Layer potatoes (sprayed with cooking spray), onions, cheese and undiluted soup.
  • Repeat layers, adding salt and pepper to taste. After layers are in dish, mix remaining soup with milk and pour over mixture. Top with more cheese.
  • Bake 1 hour at 350°.
