Ingredients
- 1 3/4 lb. fresh okra
- 1 1/2 c. yellow cornmeal
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1/2 c. nonfat buttermilk
- 1 egg, lightly beaten
Method
- Wash okra, trim ends and cut into 1/2-inch pieces.
- Combine cornmeal, salt and pepper in a medium bowl.
- Stir well and set aside.
