Ingredients

  • 1 c. sliced mushrooms
  • 1 c. tomato sauce
  • 1 (No. 2) can tomatoes
  • 1/8 c. chicken broth, defatted
  • 1/4 tsp. basil
  • 1/4 tsp. oregano
  • 1 bay leaf
  • 1/2 tsp. salt
  • 2 tsp. minced garlic
  • 1 chopped onion
  • 4 half chicken breasts, skinned and boned
  • 1 Tbsp. liquid Butter Buds

Method

  • Heat Butter Buds in a nonstick skillet and brown chicken, onion and garlic.
  • Add all other ingredients except mushrooms. Bring to a boil.
  • Cover and simmer about 30 minutes.
  • Add mushrooms.
  • Cook 10 more minutes.
  • Remove chicken from pan and boil down sauce until slightly thickened.
  • Serve over cooked pasta or rice.
  • Serves 4.
