Ingredients
- 1 1/2 tsp. cinnamon
- 3/4 c. sugar
- 1 1/2 c. all-purpose flour
- 2 tsp. baking soda
- 1/2 c. applesauce
- 2 tsp. baking powder
- 1 container egg substitute
- 10 oz. carrots
Method
- Preheat oven to 350°.
- Mix cinnamon, flour, baking soda and baking powder together; set aside in a small bowl.
- Grate and drain carrots.
- Mix sugar and applesauce together in bowl.
- Add eggs, one at a time, beating well after each addition.
- Add carrots and mix well.
- Mix in a little at a time the flour mixture, to blend, until all of the flour mixture is added.
