Ingredients

  • 1 1/2 tsp. cinnamon
  • 3/4 c. sugar
  • 1 1/2 c. all-purpose flour
  • 2 tsp. baking soda
  • 1/2 c. applesauce
  • 2 tsp. baking powder
  • 1 container egg substitute
  • 10 oz. carrots

Method

  • Preheat oven to 350°.
  • Mix cinnamon, flour, baking soda and baking powder together; set aside in a small bowl.
  • Grate and drain carrots.
  • Mix sugar and applesauce together in bowl.
  • Add eggs, one at a time, beating well after each addition.
  • Add carrots and mix well.
  • Mix in a little at a time the flour mixture, to blend, until all of the flour mixture is added.
