Ingredients
- 1 cup self raising flour
- 12 cup traditional rolled oats
- 12 teaspoon baking powder
- 12 cup butter
- 34 cup firmly packed brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 12 cup chocolate chips
- 12 cup toasted coconut
- 12 cup dried cranberries or 12 cup dried cherries
- 12 cup chopped pecans
Method
- Beat the butter and sugar until thick and fluffy.
- Add the egg and vanilla and beat again.
- Add all the remaining ingredients all at once and stir like mad.
- Drop dessert spoon sized mounds of dough on to prepared baking trays covered with baking paper, allow spreading room (about 2 inches).
- Bake at 350oF (170oC) for 13-15 minutes.
- Cool on the racks and store in an airtight container for upto a week.
