Ingredients

  • 1 cup self raising flour
  • 12 cup traditional rolled oats
  • 12 teaspoon baking powder
  • 12 cup butter
  • 34 cup firmly packed brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 12 cup chocolate chips
  • 12 cup toasted coconut
  • 12 cup dried cranberries or 12 cup dried cherries
  • 12 cup chopped pecans

Method

  • Beat the butter and sugar until thick and fluffy.
  • Add the egg and vanilla and beat again.
  • Add all the remaining ingredients all at once and stir like mad.
  • Drop dessert spoon sized mounds of dough on to prepared baking trays covered with baking paper, allow spreading room (about 2 inches).
  • Bake at 350oF (170oC) for 13-15 minutes.
  • Cool on the racks and store in an airtight container for upto a week.
