Ingredients
- 8 oz. unsweetened pineapple juice
- 8 oz. unsweetened pineapple chunks
- 2 c. chicken, cooked or uncooked
- 1 large green pepper, chopped
- 1 large onion, chopped
- 2 Tbsp. soy sauce
- 1 Tbsp. cornstarch
- 1 Tbsp. vinegar
Method
- Pour pineapple juice in wok or frypan.
- Heat; add onion, green pepper and chicken.
- Cook and stir about 10 minutes.
- Add soy sauce, pineapple and vinegar.
- Mix cornstarch with 1/4 cup water; add to thicken mixture.
- Serve over hot rice.
- Serves 4.
