Ingredients

  • 8 oz. unsweetened pineapple juice
  • 8 oz. unsweetened pineapple chunks
  • 2 c. chicken, cooked or uncooked
  • 1 large green pepper, chopped
  • 1 large onion, chopped
  • 2 Tbsp. soy sauce
  • 1 Tbsp. cornstarch
  • 1 Tbsp. vinegar

Method

  • Pour pineapple juice in wok or frypan.
  • Heat; add onion, green pepper and chicken.
  • Cook and stir about 10 minutes.
  • Add soy sauce, pineapple and vinegar.
  • Mix cornstarch with 1/4 cup water; add to thicken mixture.
  • Serve over hot rice.
  • Serves 4.
