Ingredients

  • 4 lbs beef roast (rib roast)
  • black pepper, freshly cracked
  • kosher salt
  • 1 teaspoon garlic powder

Method

  • Bring the roast to room temperature.
  • Preheat the oven to 550 degrees.
  • Rub the meat down with Kosher salt, pepper and garlic powder and place in oven in roasting pan.
  • Roast for 15 minutes per pound.
  • Then TURN OFF THE OVEN and do NOT open the door!
  • Go play a couple of games of tennis, return 2-4 hours later and remove the roast from the oven for perfectly done beef.
  • Voila!
