Ingredients

  • 6 1/2 c. cooked & mashed sweet potatoes
  • 1 c. granulated sugar
  • 1 c. brown sugar
  • 6 Large eggs, slightly beaten
  • 1/2 teaspoon ginger
  • 1/2 teaspoon allspice
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon vanilla extract
  • 1 1/2 (13 ounce.) cans evaporated lowfat milk
  • 2 sticks (1 c.) butter
  • 2 uncooked (9") pastry shells
  • Pecans & whipped cream for garnish

Method

  • Mix all ingredients (through the butter) together, pour into uncooked fluted pie shells.
  • Bake at 475 degrees for 10 min.
  • Reduce heat to 350 degrees and bake 45 min.
  • Garnish with pecans and whipped cream.
  • Makes 2 pies.
