Ingredients
- 2 c. frozen whole strawberries
- 1 tsp. cinnamon
- 1 1/4 c. chopped pecans
- 1 tsp. salt
- 4 eggs
- 3 c. plus 2 Tbsp. flour
- 2 c. sugar
- 1 1/4 c. oil
- 1 tsp. baking soda
Method
- Place berries in medium bowl.
- Sprinkle with sugar.
- Let stand until thawed and then slice.
- Preheat to 350°.
- Grease 2 (9 x 15-inch) loaf pans.
- Combine flour, sugar, cinnamon, salt and baking soda.
- Mix well in large bowl.
- Add oil and eggs to berries.
- Add flour mixture; stir in pecans.
- Blend until ingredients are moistened.
- Divide batter between 2 pans.
- Bake until toothpick comes clean in center, 45 to 50 minutes.
- Cool in pan 10 minutes.
- Turn out on rack and cool again.
