Ingredients

  • 2 c. frozen whole strawberries
  • 1 tsp. cinnamon
  • 1 1/4 c. chopped pecans
  • 1 tsp. salt
  • 4 eggs
  • 3 c. plus 2 Tbsp. flour
  • 2 c. sugar
  • 1 1/4 c. oil
  • 1 tsp. baking soda

Method

  • Place berries in medium bowl.
  • Sprinkle with sugar.
  • Let stand until thawed and then slice.
  • Preheat to 350°.
  • Grease 2 (9 x 15-inch) loaf pans.
  • Combine flour, sugar, cinnamon, salt and baking soda.
  • Mix well in large bowl.
  • Add oil and eggs to berries.
  • Add flour mixture; stir in pecans.
  • Blend until ingredients are moistened.
  • Divide batter between 2 pans.
  • Bake until toothpick comes clean in center, 45 to 50 minutes.
  • Cool in pan 10 minutes.
  • Turn out on rack and cool again.
