Ingredients

  • 1 1/2 lb. ground fully cooked ham
  • 1/2 lb. ground pork
  • 1 (15 1/2 oz.) can pineapple chunks, drained (reserve syrup)
  • 1/2 c. soft bread crumbs
  • 2 eggs, beaten
  • 1/3 c. chopped onion
  • 1 Tbsp. snipped parsley
  • 1/3 c. packed brown sugar
  • 2 Tbsp. lemon juice
  • 1 Tbsp. prepared mustard

Method

  • Heat oven to 350°. Mix ham, pork, 1/2 cup of reserved pineapple syrup, bread crumbs, eggs, onion and parsley.
  • Divide mixture into 6 parts; shape into loaves. Place in ungreased rectangular dish, 13 x 9 x 2-inches. Top each with 3 pineapple chunks, pressing lightly into loaves.
