- 1 can (15 Oz. Size) Black Beans, Drained And Rinsed
- 1 can (14 Oz. Size) Corn, Drained And Rinsed
- 1 whole Red Pepper, Diced
- 1 whole Shallot, Minced (Or Red Onion If Preferred)
- 2 cloves Garlic, Minced
- 1/3 cups Fresh Cilantro, Chopped
- 5 Tablespoons Olive Oil
- 4 Tablespoons Fresh Lime Juice
- 1 Tablespoon Sugar
- 1 teaspoon Lime Zest
- 3/4 teaspoons Sea Salt
- 1/4 teaspoons Cayenne Pepper
- 1 whole Avocado, Diced (optional)
Method
- Mix all of the ingredients together in a bowl except the avocado. Cover and refrigerate for a few hours or overnight. If you're using avocado, add it right before serving. Enjoy!
