Ingredients

  • 1 can (15 Oz. Size) Black Beans, Drained And Rinsed
  • 1 can (14 Oz. Size) Corn, Drained And Rinsed
  • 1 whole Red Pepper, Diced
  • 1 whole Shallot, Minced (Or Red Onion If Preferred)
  • 2 cloves Garlic, Minced
  • 1/3 cups Fresh Cilantro, Chopped
  • 5 Tablespoons Olive Oil
  • 4 Tablespoons Fresh Lime Juice
  • 1 Tablespoon Sugar
  • 1 teaspoon Lime Zest
  • 3/4 teaspoons Sea Salt
  • 1/4 teaspoons Cayenne Pepper
  • 1 whole Avocado, Diced (optional)

Method

  • Mix all of the ingredients together in a bowl except the avocado. Cover and refrigerate for a few hours or overnight. If you're using avocado, add it right before serving. Enjoy!
