Ingredients

  • 1 medium head cabbage
  • 1 can dried lima or butter beans
  • 4 slices buttered bread, cut in fourths
  • 1/2 stick butter
  • 1/2 tsp. salt
  • black pepper
  • 1 can evaporated milk
  • 2 Tbsp. cornstarch

Method

  • Cut cabbage in fourths and boil in salted water to cover.
  • In another pot, put beans, cream, butter and a little salt and pepper. Bring to a boil, then add cornstarch which has been dissolved in 1/2 cup water. Cook until smooth.
  • Place a layer of cabbage, then a layer of bean mixture into casserole dish until it is full.
  • Cover top of dish with bread cubes and bake until bread is brown.
