Ingredients
- 8 c. chicken stock or 48 oz. can stock
- 2 cloves chopped garlic
- 1 onion, chopped
- 3/4 c. chopped carrots
- 1 c. chopped celery
- 1 c. lentils
- 1 bunch spinach
- 3 Tbsp. lemon juice or vinegar
- salt and pepper to taste
Method
- Wash and pick over lentils.
- Place in boiling water and cook 2 minutes.
- Cover; let sit 1 hour and drain.
- (This removes gas.)
