Ingredients
- 1 lb. dried lentils
- 1 medium onion
- 2 stalks celery, finely chopped
- 2 minced garlic cloves
- 1/2 c. olive oil
- 3 Tbsp. tomato paste (optional)
- lite salt to taste
- pepper to taste
- 2 Tbsp. wine vinegar or Marsala
Method
- Wash lentils and bring to a slow boil.
- Reduce heat; simmer for 30 minutes.
- Add remaining ingredients and simmer, covered, another 30 minutes to an hour.
- Excellent served with corn bread. Makes 4 to 6 servings.
