Ingredients
- 34 cup white wine
- 2 tablespoons shallots, minced (onions will do in a pinch)
- 1 tablespoon lemon peel, grated (fresh best)
- 1 cup heavy cream
- 14 teaspoon turmeric
- 12 teaspoon salt
- 12 teaspoon cornstarch, mixed with 3 tbs cold water
- 14 cup lemon juice
Method
- Combine wine, shallots and lemon peel in a small saucepan.
- Cook over medium heat until reduced by half.
- Whisk in cream, tumeric and salt.
- Bring to a simmer while whisking.
- Whisk in cornstarch and water mixture.
- Remove from heat and mix in lemon juice.
