Ingredients

  • 34 cup white wine
  • 2 tablespoons shallots, minced (onions will do in a pinch)
  • 1 tablespoon lemon peel, grated (fresh best)
  • 1 cup heavy cream
  • 14 teaspoon turmeric
  • 12 teaspoon salt
  • 12 teaspoon cornstarch, mixed with 3 tbs cold water
  • 14 cup lemon juice

Method

  • Combine wine, shallots and lemon peel in a small saucepan.
  • Cook over medium heat until reduced by half.
  • Whisk in cream, tumeric and salt.
  • Bring to a simmer while whisking.
  • Whisk in cornstarch and water mixture.
  • Remove from heat and mix in lemon juice.
