Ingredients
- 5 lbs salmon fillets, skinned preferred
- 1/2 sweet vidalia onion, sliced
- 1/2 cup butter
- 1 (8 ounce) can frozen concentrated lemonade or (12 ounce) can frozen concentrated lemonade
Method
- Tear off a sheet of aluminum foil large enough for the fish, butter the area where the fish will lay.
- Place fish on the butter and place slices of sweet onion on top of the fish.
- Place 4 or 5 pats of butter across the fish.
- Pull foil up along the sides to create a boat like cradle and pour thawed lemonade onto fish, about half the can.
- Roll the foil up to seal the juice inside and cook at 425 degrees for 30 minutes.
- Iit is important to try and keep the juices inside the foil until the fish is cooked.
- Remove from grille with spatulas or in the oven use a 13" x 9" cake pan to catch any drippings.
