Ingredients

  • 1 c. flour
  • 1/2 c. margarine, softened
  • 1/4 c. powdered sugar
  • 2 eggs
  • 1 c. sugar
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 2 tsp. grated lemon peel
  • 2 Tbsp. lemon juice
  • additional powdered sugar

Method

  • Preheat oven to 350°.
  • Mix flour, margarine and powdered sugar.
  • Press evenly in 8 x 8 x 2-inch ungreased pan, building up 1/2-inch edges.
  • Bake 20 minutes.
  • Beat remaining ingredients (except powdered sugar) until fluffy.
  • Pour over hot crust.
  • Bake 25 minutes or until no indention when touched.
  • Cool and sprinkle with additional powdered sugar.
