Ingredients

  • 1 box lemon cake mix
  • 1/3 c. margarine or butter
  • 3 eggs
  • 1 c. granulated sugar
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 2 tsp. grated lemon peel
  • 1/4 c. lemon juice
  • powdered sugar to sprinkle over top

Method

  • Heat oven to 350°.
  • Mix cake mix, margarine and 1 egg until crumbly.
  • Measure out 1 cup and reserve.
  • Pack rest
  • in ungreased 13 x 9 x 2-inch pan.
  • Bake until light brown (15 minutes).
  • Mix remaining ingredients together and beat until light and foamy.
  • Pour over hot layer and sprinkle reserved crumbled mix and bake 15 minutes more.
  • Sprinkle powdered sugar.
