Ingredients

  • 3/4 c. self-rising flour
  • 1/4 tsp. salt
  • 1 (3 1/8 oz.) pkg. vanilla pudding (not instant)
  • 1 egg
  • 3/4 c. milk
  • 1 (29 oz.) can sliced peaches, drained (reserve juice)
  • 2 (8 oz.) pkg. cream cheese
  • 6 Tbsp. peach juice
  • 1 c. sugar

Method

  • Preheat oven to 350°.
  • In medium bowl, combine first 5 ingredients.
  • Mix until smooth.
  • Pour batter into 9-inch square baking pan coated with vegetable cooking spray.
  • Place peaches over batter.
  • In separate bowl, cream together cheese, peach juice and sugar.
  • Spoon mixture over peaches.
  • Spread to cover peaches completely.
  • Bake for 35 minutes.
  • Cool at least 45 minutes before serving.
  • Yields 12 servings; each serving contains 304 calories (41% from fat).
