Ingredients
- 1 1/2 c. water
- 1/2 c. lemon juice
- 1/3 c. cornstarch
- 1 c. sugar
- 6 egg yolks
- 1 Tbsp. lemon zest
- 3 Tbsp. butter
- 6 egg whites
- 3/4 c. sugar
- 1/2 tsp. cream of tartar
Method
- Mix first 6 ingredients together over medium heat.
- Stir until thickened.
- Whisk in 3 tablespoons butter.
- Pour into 9-inch baked pie crust.
- Beat egg whites with 3/4 cup sugar and cream of tartar until stiff.
- Bake 30 minutes at 325°.
