Ingredients
- 1 (20 oz.) can frozen pineapple juice concentrate
- 2 Tbsp. (heaping) Emes gelatin
- 1/4 tsp. grated lemon rind
- 2 Tbsp. frozen orange juice concentrate
- 5 Tbsp. fresh lemon juice
- 1 1/2 c. water
Method
- Mix all ingredients and place in refrigerator to set up.
- Take out when firm and whiz in blender until very smooth.
- Pour in baked crust and put back in refrigerator; let set up until firm. Garnish with lemon twist and mint.
