Ingredients

  • 4 eggs, separated
  • 1 box white cake mix
  • 1/3 c. oil
  • 1 small box lemon jello
  • 4 Tbsp. lemon extract
  • 1 c. apricot nectar
  • 1 c. powdered sugar
  • 4 Tbsp. lemon juice

Method

  • Mix cake mix, oil, jello, lemon extract and apricot nectar in a large bowl.
  • Add egg yolks and beat well.
  • Fold in stiffly beaten egg whites.
  • Bake 1 hour at 325° in greased and floured tube pan.
  • Mix the powdered sugar and lemon juice and pour over cake while it is still hot.
