Ingredients
- 3 Large Egg Yoks
- 1/4 Cup fresh lemon juice (2 lemons)
- Zest of 1/2 lemon
- 6 T. Sugar
- 4 T. Unsalted butter pieces, kept cold
Method
- Put yolks, juice, zest & sugar in pan over medium heat. Wisk to combine, then stir constantly w/ wooden spoon until thickened, 5 - 7 mins. Turn off heat and add butter piece at a time. Cover and chill 1 hr or up to 2 days.
