Ingredients
- 3/4 c. sugar
- 1 c. milk
- 2 eggs, separated
- 3 Tbsp. flour
- 1/4 tsp. cream of tartar
- 1/4 tsp. salt
- 2 Tbsp. lemon juice
- grated rind of 1 lemon
- 2 Tbsp. butter
Method
- Combine 1/2 cup sugar and milk and heat.
- Beat egg yolks.
- Add flour combined with sugar and salt.
- Pour into hot mixture and cook until it begins to thicken.
- Add lemon juice and grated rind and cook 1 minute; stir.
- Add butter; stir well.
- Pour into baked pie shell.
- Beat 2 egg whites combined with 1/4 teaspoon cream of tartar.
- Add 4 teaspoons of sugar.
- Beat until stiff.
- Bake at 375° for about 15 minutes.
