Ingredients

  • 3/4 c. sugar
  • 1 c. milk
  • 2 eggs, separated
  • 3 Tbsp. flour
  • 1/4 tsp. cream of tartar
  • 1/4 tsp. salt
  • 2 Tbsp. lemon juice
  • grated rind of 1 lemon
  • 2 Tbsp. butter

Method

  • Combine 1/2 cup sugar and milk and heat.
  • Beat egg yolks.
  • Add flour combined with sugar and salt.
  • Pour into hot mixture and cook until it begins to thicken.
  • Add lemon juice and grated rind and cook 1 minute; stir.
  • Add butter; stir well.
  • Pour into baked pie shell.
  • Beat 2 egg whites combined with 1/4 teaspoon cream of tartar.
  • Add 4 teaspoons of sugar.
  • Beat until stiff.
  • Bake at 375° for about 15 minutes.
