Ingredients
- 133 grams butter
- 1 tablespoon lemon rind
- 1 cup powdered sugar
- 1 tablespoon lemon juice
- 1/4 teaspoon vanilla
- 1 1/2 cups flour
Method
- Preheat the oven to 180 celsius.
- Beat the butter with the lemon rind until creamy and add the powdered sugar. Continue to beat, adding the lemon juice and the vanilla.
- Add the flour, mixing gently to incorporate into batter.
- Shape the dough into balls, pressing each one with the palm of the hand to form discs.
- Bake at 180 C until the edges are slightly golden in color.
- Remove from oven and place on rack to cool.
