Ingredients
- 3/4 c. butter
- 1 tsp. lemon extract
- 1/2 c. sugar
- 1 tsp. vanilla
- 1 egg yolk
- 2 c. sifted flour
- 1 1/2 c. flaked coconut
Method
- Cream the butter and sugar until light and fluffy. Beat in egg, vanilla and lemon extract.
- Blend in flour and coconut. Shape into walnut size balls.
- Place on baking sheet. Flatten with fork. Bake in moderate 350° oven for 8 minutes until edges are brown. Remove cookies to cooling rack. When cool, frost with lemon butter frosting.
- Makes 5 dozen.
