Ingredients

  • 1/2 c. butter or oleo
  • 1/4 c. powdered sugar
  • 1 pkg. lemon pudding
  • 1 c. chopped dates
  • 1 c. grated or flaked coconut
  • 1 c. flour
  • 1/2 c. sugar
  • 1/2 tsp. baking powder
  • 2 eggs

Method

  • Cream butter and powdered sugar until light and fluffy.
  • Blend in flour.
  • Press evenly in 8-inch or 9-inch square pan.
  • Bake at 350° for 20 minutes or until lightly browned.
  • Meanwhile, beat eggs until thick and lemon colored and gradually beat in sugar. Add pudding and baking powder, then dates and coconut.
  • Spread on hot crust.
  • Return to oven.
  • Bake 25 to 30 minutes or until puffed and browned.
  • Cool and cut into bars.
  • Makes about 18 bars.
