Ingredients
- 1/2 c. butter or oleo
- 1/4 c. powdered sugar
- 1 pkg. lemon pudding
- 1 c. chopped dates
- 1 c. grated or flaked coconut
- 1 c. flour
- 1/2 c. sugar
- 1/2 tsp. baking powder
- 2 eggs
Method
- Cream butter and powdered sugar until light and fluffy.
- Blend in flour.
- Press evenly in 8-inch or 9-inch square pan.
- Bake at 350° for 20 minutes or until lightly browned.
- Meanwhile, beat eggs until thick and lemon colored and gradually beat in sugar. Add pudding and baking powder, then dates and coconut.
- Spread on hot crust.
- Return to oven.
- Bake 25 to 30 minutes or until puffed and browned.
- Cool and cut into bars.
- Makes about 18 bars.
