Ingredients

  • 2 c. flour
  • 1/2 c. powdered sugar
  • 2 c. sugar
  • 4 Tbsp. flour
  • 1 tsp. baking powder
  • 4 eggs, beaten slightly
  • 6 Tbsp. lemon juice
  • grated rind of 1 lemon

Method

  • Mix 2 cups flour and powdered sugar.
  • Pat in a 9 x 13-inch greased pan (glass pan works best).
  • Bake for 25 minutes at 350°. Mix the sugar, 4 tablespoons flour and baking powder together; add to the beaten eggs, lemon juice and grated lemon rind.
  • Mix well; spread over cooked crust.
  • Bake again for 25 minutes at 350°. Makes 96 desserts.
