Ingredients
- 2 c. flour
- 1/2 c. powdered sugar
- 2 c. sugar
- 4 Tbsp. flour
- 1 tsp. baking powder
- 4 eggs, beaten slightly
- 6 Tbsp. lemon juice
- grated rind of 1 lemon
Method
- Mix 2 cups flour and powdered sugar.
- Pat in a 9 x 13-inch greased pan (glass pan works best).
- Bake for 25 minutes at 350°. Mix the sugar, 4 tablespoons flour and baking powder together; add to the beaten eggs, lemon juice and grated lemon rind.
- Mix well; spread over cooked crust.
- Bake again for 25 minutes at 350°. Makes 96 desserts.
