Ingredients

  • 3/4 lb. leeks
  • 2/3 c. sour cream
  • 1 small garlic clove, peeled and crushed
  • 1 tsp. prepared horseradish
  • 1 tsp. brown sugar
  • 2 Tbsp. wine vinegar
  • salt
  • pepper
  • paprika pepper to finish

Method

  • Cook the leeks in the minimum of boiling salted water for 15 minutes or until tender.
  • Drain.
  • Place in deep serving dish.
  • Mix together the remaining ingredients with salt and pepper to taste and pour over leeks.
  • Leave to marinate for at least 1 hour in the refrigerator.
  • Then sprinkle with a little paprika to add colour (color) just before serving.
