Ingredients
- 3/4 lb. leeks
- 2/3 c. sour cream
- 1 small garlic clove, peeled and crushed
- 1 tsp. prepared horseradish
- 1 tsp. brown sugar
- 2 Tbsp. wine vinegar
- salt
- pepper
- paprika pepper to finish
Method
- Cook the leeks in the minimum of boiling salted water for 15 minutes or until tender.
- Drain.
- Place in deep serving dish.
- Mix together the remaining ingredients with salt and pepper to taste and pour over leeks.
- Leave to marinate for at least 1 hour in the refrigerator.
- Then sprinkle with a little paprika to add colour (color) just before serving.
