Ingredients

  • lamb with Basil Stuffing
  • 2 slices bacon chopped
  • 2/3 cup fresh breadcrumbs
  • 1/4 cup fresh basil chopped
  • 3 tablespoons fresh parsley chopped
  • 2 tablespoons pine nuts toasted
  • 2 cloves garlic minced
  • 1/2 Orange zested
  • 1/2 teaspoon cumin seeds
  • 2 pounds lamb loin butterflied, trimmed
  • 1 tablespoon oil
  • glaze
  • 1/2 cup orange juice
  • 2 tablespoons maple syrup
  • salad to serve

Method

  • Preheat oven to 350°F.
  • In a medium frying pan, cook bacon over high heat for 3-4 mins, until crisp. Mix with breadcrumbs, herbs, pine nuts, garlic, orange zest and cumin. Coat lamb in mixture, roll up and secure with butcher's twine.
  • In a large frying pan, heat oil over high heat. Sear lamb for 8-10 mins, until browned on all sides. Transfer to a rack in a roasting pan. Season. Roast for 20-25 mins, or until cooked to your liking. Let rest, covered, for 15 mins. Slice.
  • Meanwhile, to make the glaze, heat orange juice and maple syrup over low heat until slightly reduced.
  • Serve lamb with glaze and salad.
