Ingredients
- 1/2 avocado small, pitted, flesh removed
- 1 clove garlic finely chopped
- 1 tablespoon low-fat yogurt
- 1 tablespoon vegetable stock
- 1 teaspoon lemon juice
- 1 tablespoon canola oil
- 1 lamb chop
- 2 ounces frisee
- 2 ounces cherry tomatoes halved
- 1 1/2 ounces button mushrooms sliced
Method
- For avocado dressing, puree avocado, garlic, yogurt, stock and lemon juice until smooth. Set aside.
- Heat oil in a pan and sear lamb for 2-3 mins, until cooked to your liking. Season to taste then cut into bite-size pieces. Serve with frisee, tomatoes, mushrooms and avocado dressing.
