Ingredients

  • 1/2 avocado small, pitted, flesh removed
  • 1 clove garlic finely chopped
  • 1 tablespoon low-fat yogurt
  • 1 tablespoon vegetable stock
  • 1 teaspoon lemon juice
  • 1 tablespoon canola oil
  • 1 lamb chop
  • 2 ounces frisee
  • 2 ounces cherry tomatoes halved
  • 1 1/2 ounces button mushrooms sliced

Method

  • For avocado dressing, puree avocado, garlic, yogurt, stock and lemon juice until smooth. Set aside.
  • Heat oil in a pan and sear lamb for 2-3 mins, until cooked to your liking. Season to taste then cut into bite-size pieces. Serve with frisee, tomatoes, mushrooms and avocado dressing.
