Ingredients
- 2 lb. beef, cubed
- 2 large onion, sliced thin
- 1 can tomato sauce or solid pack tomatoes
- 1 tsp. mint
- 1 Tbsp. parsley
- salt and pepper
- 1 large eggplant, cubed
Method
- Brown meat and onions in butter or shortening.
- Add tomato sauce, mint, parsley and seasonings.
- Let simmer until meat is almost cooked, about 1 1/2 hours.
- Soak eggplant in salted water; drain and re-wash.
- Put into meat mixture and cook until done, approximately 20 minutes.
- Serves 4 to 6.
