Ingredients

  • 2 to 3 lb. whole chickens
  • 1/4 c. olive oil
  • 1/8 c. lemon juice
  • 1 tsp. salt
  • 1/4 lb. butter or 1 stick margarine
  • 2 c. canned tomatoes, stewed or crushed
  • 1/2 tsp. pepper
  • 1 1/2 tsp. oregano
  • 1/2 tsp. salt

Method

  • Rub all surfaces of the chicken with olive oil, lemon juice and salt mixture.
  • Place in a large roasting pan and bake at 375° for 30 minutes.
  • Melt butter.
  • Add tomatoes, pepper, oregano and salt to taste.
  • Cook over medium heat in a saucepan for 5 minutes. Pour over chickens.
  • Reduce heat to 350°.
  • Bake chickens for an additional 20 to 30 minutes.
  • Baste frequently.
  • Serve with rice or couscous.
  • Makes 6 to 8 servings.
