Ingredients
- 2 to 3 lb. whole chickens
- 1/4 c. olive oil
- 1/8 c. lemon juice
- 1 tsp. salt
- 1/4 lb. butter or 1 stick margarine
- 2 c. canned tomatoes, stewed or crushed
- 1/2 tsp. pepper
- 1 1/2 tsp. oregano
- 1/2 tsp. salt
Method
- Rub all surfaces of the chicken with olive oil, lemon juice and salt mixture.
- Place in a large roasting pan and bake at 375° for 30 minutes.
- Melt butter.
- Add tomatoes, pepper, oregano and salt to taste.
- Cook over medium heat in a saucepan for 5 minutes. Pour over chickens.
- Reduce heat to 350°.
- Bake chickens for an additional 20 to 30 minutes.
- Baste frequently.
- Serve with rice or couscous.
- Makes 6 to 8 servings.
