Ingredients

  • 1 1/2 lbs chicken, thinly sliced
  • 1 sweet onion, thinly sliced
  • 16 ounces fresh mushrooms, thinly sliced
  • 6 tablespoons extra virgin olive oil, divided
  • 2 cups beef broth
  • 3 tablespoons dark soy sauce
  • 2 tablespoons potato starch
  • 1 tablespoon ginger, grated
  • 1 garlic clove, finely diced
  • 2 teaspoons sugar
  • 1/2 teaspoon white pepper

Method

  • Combine the broth, soy sauce , potato starch, ginger, sugar and pepper and set aside.
  • Stir-fry the onions for 3 minutes in 2 tablespoons oil, then set aside in a strainer.
  • Stir-fry the mushrooms for 3 minutes in 2 tablespoons oil, then add to the strainer.
  • Stir-fry the meat in 2 tablespoons oil until cooked thoroughly.
  • Add the sauce mix and stir until thickened.
  • Add back the drained onions and mushrooms.
  • Serve over cooked rice.
