Ingredients
- 1 cup Flour
- 1 teaspoon Baking Powder
- 1/4 cups Sugar
- 1-1/2 ounces, weight Butter, Melted
- 1 Egg
- 1/2 cups Milk, Or More As Needed
- 6 slices Kiwifruit, Or 1 Slice For Each Muffin
Method
- Preheat oven to 200°C (390°F).
- In a bowl, stir flour, baking powder, and sugar. In another bowl, add melted butter, egg and milk. Beat until well mixed, adding more milk as needed if the mixture is too thick.
- Spray muffin liners with some oil and place muffin liners into muffin tin. Spoon into muffin liners filling 1/2 to 3/4 full. Place a slice of kiwifruit on top, lightly pressing them into the mixture.
- Bake for 25-30 minutes until beginning to brown. Leave in tin on a cooling rack until cooled.
