Ingredients

  • 1 cup Flour
  • 1 teaspoon Baking Powder
  • 1/4 cups Sugar
  • 1-1/2 ounces, weight Butter, Melted
  • 1 Egg
  • 1/2 cups Milk, Or More As Needed
  • 6 slices Kiwifruit, Or 1 Slice For Each Muffin

Method

  • Preheat oven to 200°C (390°F).
  • In a bowl, stir flour, baking powder, and sugar. In another bowl, add melted butter, egg and milk. Beat until well mixed, adding more milk as needed if the mixture is too thick.
  • Spray muffin liners with some oil and place muffin liners into muffin tin. Spoon into muffin liners filling 1/2 to 3/4 full. Place a slice of kiwifruit on top, lightly pressing them into the mixture.
  • Bake for 25-30 minutes until beginning to brown. Leave in tin on a cooling rack until cooled.
