Ingredients

  • 3 teaspoons Cornstarch, Dissolved In 1/4 Cup Water
  • 5 whole Kiwi
  • 2 teaspoons Lemon Juice
  • 3/4 cups Granulated Sugar
  • 1 cup Water

Method

  • In a measuring cup, mix the cornstarch with 1/4 cup water. (You can leave out this step and instead use 2 teaspoons fruit pectin, the freezer jam kind.)
  • Cut each kiwi in half and scoop out the flesh with a teaspoon. Place all in a medium saucepan. Add lemon juice, sugar and 1 cup water. Cook on medium heat until it boils.
  • Add the cornstarch mixture and stir. Cook 2 minutes.
  • Take of the heat and cool in the saucepan for 10 minutes. Pour into a jar, put the lid on and place in the fridge. It will thicken up as it cools.
