- 1 chicken, boiled and deboned
- 1 can cream of mushroom soup
- 1 can Ro-Tel tomatoes
- 1 onion, diced
- 1 c. grated cheese
- 1/2 c. chicken broth from chicken
- 1 pkg. corn tortillas
Method
- Debone broiled chicken and put in bottom of casserole dish. Cut corn tortillas into long strips and layer on top of chicken. Sprinkle onions on top of tortillas.
- Sprinkle grated cheese next. Mix in a separate bowl chicken broth, Ro-Tel tomatoes and cream of mushroom soup.
- Pour this mixture on top of casserole.
- Bake at 350° for 30 to 45 minutes.
