Ingredients

  • 1 chicken, boiled and deboned
  • 1 can cream of mushroom soup
  • 1 can Ro-Tel tomatoes
  • 1 onion, diced
  • 1 c. grated cheese
  • 1/2 c. chicken broth from chicken
  • 1 pkg. corn tortillas

Method

  • Debone broiled chicken and put in bottom of casserole dish. Cut corn tortillas into long strips and layer on top of chicken. Sprinkle onions on top of tortillas.
  • Sprinkle grated cheese next. Mix in a separate bowl chicken broth, Ro-Tel tomatoes and cream of mushroom soup.
  • Pour this mixture on top of casserole.
  • Bake at 350° for 30 to 45 minutes.
