Ingredients

  • 4 eggs separated
  • 6 large potatoes peeled grated and drained
  • 1 large onion grated
  • salt and pepper to taste
  • pinch of baking powder
  • 1 cup vegetable oil

Method

  • Beat egg whites until stiff and dry
  • In a large mixing bowl mix potatoes onnion egg yolks slat pepper and baking powder, Add egg whites fold in mix well
  • Heat oil in a large frying pan and drop latkes from a large cooking spoon into the hot fat. Fry golden brown on both sides drain on paper towels. Can be served with meats or with sugar apple sauce sour cream.
