Ingredients
- 2 c. dried kidney beans
- 1 c. chopped celery
- 1 green or red sweet pepper, chopped
- 1/4 c. parsley
- 4 scallions, chopped
- 1/4 c. olive oil
- 6 Tbsp. vinegar
- 1 Tbsp. molasses
- 2 lettuce leaves
- 8 radishes, sliced
- 4 tomatoes, quartered
Method
- Cook beans until soft.
- Combine celery, pepper, parsley and scallions in large bowl.
- Mix well vinegar and molasses in jar with lid on.
- Pour over beans.
- Serve on lettuce leaves and garnish with radishes and tomatoes.
