Ingredients

  • 2 c. dried kidney beans
  • 1 c. chopped celery
  • 1 green or red sweet pepper, chopped
  • 1/4 c. parsley
  • 4 scallions, chopped
  • 1/4 c. olive oil
  • 6 Tbsp. vinegar
  • 1 Tbsp. molasses
  • 2 lettuce leaves
  • 8 radishes, sliced
  • 4 tomatoes, quartered

Method

  • Cook beans until soft.
  • Combine celery, pepper, parsley and scallions in large bowl.
  • Mix well vinegar and molasses in jar with lid on.
  • Pour over beans.
  • Serve on lettuce leaves and garnish with radishes and tomatoes.
