- 1/8 c. green pepper
- 1/4 c. chopped onion
- 1/8 c. chopped celery
- 1 large clove garlic, minced
- 1/2 can kidney beans, drained and rinsed
- 1/2 c. peeled and chopped tomato
- 1/8 c. water
- 1/4 tsp. chili powder
- 1/8 tsp. pepper
- dash of Tabasco sauce
- 1 c. hot cooked rice
- 1/8 c. shredded 40% less fat sharp cheese
Method
- Coat a large nonstick skillet with cooking spray.
- Place over medium-high heat until hot.
- Add onion and next 3 ingredients. Saute until tender.
- Stir in beans and next 5 ingredients. Cover and cook 8 to 10 minutes, stirring often.
- Place hot rice in 1-quart casserole. Spoon bean mixture over rice. Sprinkle with cheese.
- Cover and let stand 5 minutes.
- Makes 3 servings.
