Ingredients

  • 1/8 c. green pepper
  • 1/4 c. chopped onion
  • 1/8 c. chopped celery
  • 1 large clove garlic, minced
  • 1/2 can kidney beans, drained and rinsed
  • 1/2 c. peeled and chopped tomato
  • 1/8 c. water
  • 1/4 tsp. chili powder
  • 1/8 tsp. pepper
  • dash of Tabasco sauce
  • 1 c. hot cooked rice
  • 1/8 c. shredded 40% less fat sharp cheese

Method

  • Coat a large nonstick skillet with cooking spray.
  • Place over medium-high heat until hot.
  • Add onion and next 3 ingredients. Saute until tender.
  • Stir in beans and next 5 ingredients. Cover and cook 8 to 10 minutes, stirring often.
  • Place hot rice in 1-quart casserole. Spoon bean mixture over rice. Sprinkle with cheese.
  • Cover and let stand 5 minutes.
  • Makes 3 servings.
