Ingredients

  • 1 1/2 c. crushed chocolate wafers
  • 1/3 c. granulated sugar
  • 1/3 c. melted butter
  • 2 envelopes unflavored gelatin
  • 1/2 c. Kahlua (homemade good to use)
  • 1/2 c. water
  • 3 eggs, separated
  • 1/4 c. sugar
  • 1/8 tsp. salt
  • 2 (8 oz. each) pkg. cream cheese
  • 1 c. heavy cream
  • 2 tsp. vanilla
  • shaved semi-sweet chocolate (run a potato peeler over a bar of chocolate)

Method

  • For crust, blend cookie crumbs with 1/3 cup sugar and melted butter.
  • Press firmly over bottom and halfway up sides of 9-inch spring-form pan.
  • Bake at 350° for 8 to 10 minutes.
  • Cool.
