Ingredients

  • 1 lb. dates
  • 1 c. sugar
  • 1 c. walnuts
  • 4 eggs, separated
  • 1/2 c. flour
  • 1 tsp. baking powder
  • 2 tsp. vanilla
  • 1/4 tsp. salt
  • 1 c. crushed pineapple
  • fruit of your choice
  • whipped cream
  • cherries for garnish

Method

  • Mix all ingredients together, adding egg whites last.
  • Spread mixture about 1/2-inch thick in 9 x 13-inch pan.
  • Bake at 350° for 1/2 hour.
  • Cool.
  • On the day dessert is served, break 1/2 of cake into small pieces.
  • Arrange on cake plate.
  • Top this with fruits as desired (bananas, peaches, fruit for salad, etc.)
  • Break remainder of cake over top.
  • Pour over all a can of crushed pineapple.
  • Spread with whipped cream and garnish with cherries.
