Ingredients
- 8 medium sized potatos
- 1 carrot
- 4 eggs
- 2 slices of ham
- Approx 200g Japanese Mayonaise
- A pinch of salt
Method
- Boil potatoes, carrot and eggs in a big pot. When cooked, approx 20-30mins (test potatoes with a fork, the fork should slide in easily), skin potaotes and carrots. Remove egg shell.
- In a big pot, mash the potatoes with a fork. Dice carrot and eggs into small cubes. Cut ham into small square slices. Add mayo and salt to the mashed potato and mix well. Mix in carrot, eggs, and ham.
- Refrigerate and serve cold.
