Ingredients
- 1 (9-inch) baked pie shell
- 4 oz. cream cheese (room temperature)
- 5 c. cleaned berries
- 1 c. water
- 2/3 c. sugar
- 2 Tbsp. cornstarch
- 2 Tbsp. lemon juice
Method
- Stir cheese until smooth.
- Spread on bottom of cooled pie shell.
- Combine 1 cup berries with water, sugar, cornstarch and lemon juice.
- Bring to boil over medium heat.
- Cook until thick and glossy, stirring constantly.
- Cool completely.
- In large bowl mix 4 cups berries with cooled glaze, carefully folding together. Spoon into pie shell.
- Garnish or cover with whipped cream or topping.
