Ingredients

  • 1 (9-inch) baked pie shell
  • 4 oz. cream cheese (room temperature)
  • 5 c. cleaned berries
  • 1 c. water
  • 2/3 c. sugar
  • 2 Tbsp. cornstarch
  • 2 Tbsp. lemon juice

Method

  • Stir cheese until smooth.
  • Spread on bottom of cooled pie shell.
  • Combine 1 cup berries with water, sugar, cornstarch and lemon juice.
  • Bring to boil over medium heat.
  • Cook until thick and glossy, stirring constantly.
  • Cool completely.
  • In large bowl mix 4 cups berries with cooled glaze, carefully folding together. Spoon into pie shell.
  • Garnish or cover with whipped cream or topping.
