Ingredients
- 2 small acorn squash
- 1 1/2 c. apple
- 1/4 c. celery
- 2 Tbsp. chopped walnuts
- 1 Tbsp. sugar
- 1/2 tsp. ground cinnamon
- salt
Method
- Cut squash in half lengthwise.
- Remove seeds.
- Bake cut-side down in baking dish at 350° for 40 minutes.
- Mix apple, celery, walnuts, sugar and cinnamon.
- Turn squash cut-side up and sprinkle with salt.
- Put apple mixture in squash halves and bake covered about 25 minutes or until apple is tender.
- Serves 4.
