Ingredients

  • 1 small chopped onion
  • 1 lb. chopped beef or chicken
  • 1 large (35 oz.) can peeled tomatoes
  • 1 (10 oz.) pkg. frozen peas
  • 1/2 tsp. oregano
  • 2 Tbsp. olive oil
  • salt and pepper
  • Romano or Parmesan cheese, grated
  • 1 lb. pasta (medium shells)

Method

  • In a saucepan, saute onions in olive oil until softened.
  • Add the chicken or beef and brown over medium heat.
  • Put tomatoes through a mill and add to mixture.
  • Season to taste.
  • Simmer uncovered approximately 20 minutes.
  • Add peas, lower heat and cook an additional 10 minutes.
  • Cook and drain pasta according to directions.
  • Toss pasta with sauce, sprinkle with cheese and serve. Yields 4 servings.
