Ingredients
- 1 to 1 1/2 pound boneless chicken breast- cut into bite size pieces
- 1 medium onion- diced
- 8 ounces- plain yoghurt
- 2/3 cup- Patak's Tikka Masala curry paste
- 28 oz. can tomatoes w/ liquid- diced or crushed
- water for thinning sauce
Method
- 1. Saute chicken and onion in 2 tablespoons olive oil until no longer pink.
- 2. Add curry paste and yoghurt.
- 3. Add tomatoes and their liquid.
- 4. Add about a 1/2 cup water to thin- add more later if you need to.
- 5. Transfer to a heavy casserole. Cover. Bake at 350 F degrees. I usually cook it for at least an hour or two for more flavor.
- 6. Serve with Basmati rice and mango chutney.
