Ingredients

  • 1 to 1 1/2 pound boneless chicken breast- cut into bite size pieces
  • 1 medium onion- diced
  • 8 ounces- plain yoghurt
  • 2/3 cup- Patak's Tikka Masala curry paste
  • 28 oz. can tomatoes w/ liquid- diced or crushed
  • water for thinning sauce

Method

  • 1. Saute chicken and onion in 2 tablespoons olive oil until no longer pink.
  • 2. Add curry paste and yoghurt.
  • 3. Add tomatoes and their liquid.
  • 4. Add about a 1/2 cup water to thin- add more later if you need to.
  • 5. Transfer to a heavy casserole. Cover. Bake at 350 F degrees. I usually cook it for at least an hour or two for more flavor.
  • 6. Serve with Basmati rice and mango chutney.
  • Wonderful the next day!
