Ingredients
- 1 1/3 c. coconut
- 1 unbaked 9-inch pie shell
- 3 Tbsp. margarine
- 1/2 c. sugar
- 3 eggs
- 1 c. dark corn syrup
- 1/8 tsp. salt
- 1 tsp. cinnamon
- 1 tsp. nutmeg
- 1 tsp. vanilla
- 2 Tbsp. dark rum or rum flavoring
Method
- Sprinkle coconut in pie shell.
- Cream butter; gradually beat in sugar.
- Add eggs and beat well.
- Blend in remaining ingredients.
- Pour over coconut in pie shell.
- Bake at 350° for 50 minutes or until slightly puffed on top.
- Cool to room temperature.
