Ingredients
- 1 c. sugar
- 1 c. cooked pumpkin
- 2 eggs (unbeaten)
- 1 tsp. soda
- 1/4 tsp. ginger
- 1 c. raisins
- 1/4 c. water
- 1/2 c. brown sugar
- 1/2 c. salad oil
- 2 c. sifted plain flour
- 1/2 c. chopped nuts
- 1/2 tsp. salt
- 1/2 tsp. nutmeg
- 1/2 tsp. cinnamon
Method
- Combine sugars, pumpkin, oil and eggs; beat until well blended.
- Sift together the flour, soda, salt and spices.
- Add and mix well.
- Stir in raisins, nuts and water.
- Bake in loaf pan at 350° for 65 minutes, or until done when tested.
