Ingredients

  • 1 c. sugar
  • 1 c. cooked pumpkin
  • 2 eggs (unbeaten)
  • 1 tsp. soda
  • 1/4 tsp. ginger
  • 1 c. raisins
  • 1/4 c. water
  • 1/2 c. brown sugar
  • 1/2 c. salad oil
  • 2 c. sifted plain flour
  • 1/2 c. chopped nuts
  • 1/2 tsp. salt
  • 1/2 tsp. nutmeg
  • 1/2 tsp. cinnamon

Method

  • Combine sugars, pumpkin, oil and eggs; beat until well blended.
  • Sift together the flour, soda, salt and spices.
  • Add and mix well.
  • Stir in raisins, nuts and water.
  • Bake in loaf pan at 350° for 65 minutes, or until done when tested.
